Our Southern Sundays are a time tested tradition. Every Sunday, James Gallagher, TJ Rhodes, and Chef Josh (35 years of combined Gallagher’s Chicken Frying experience) batter and fry fresh chicken using the same recipe that was rewritten and laminated by Chef Mickey Kitterman in 2005. That receipt is still framed in our kitchen today.
Chef Brian Hale, who joined us as we reopened after our extensive renovation, helped amplify an already beloved experience by insisting on using only fresh vegetables, and ensuring every member of the kitchen staff is creating wonderful food that is prepared correctly. For example, the corn custard is made by removing the husks from corn and cutting the kernels off the husks by hand, and we cook our fresh green beans in small batches using cast iron pans.
